Region
The
winegrowing region around the Neusiedler lake (the only steppe-like
lake in Central Europe), which is the home of ST.MARTINUS
winegrowing association, has the best locations for growing
naturally sweet white wines. Warm soil, Pannonia climate with lot of
sun and very little rain, long summers and mild autumns are ideal
for
growing high quality wines. Unique is also the infection of reaping
grapes by noble moulds, caused by the evaporation of water from the
nearby lake and the resulting high humidity. These noble moulds are
the basic ingredient for top class sweet wines. The Botrytis Cynerea
mould, for example, causes the permeability of grapes’ peel. This
causes an increase in the concentration of sugar, juice, acids and
aromatic components; the grapes shrivel and must weight increases.
Thanks
to this, our noble predicative wines offer a unique balance between
sugar content, alcohol content and acid content. This harmony and
the high contents of extracts guarantee almost an unlimited
storability of the wine.
